Stacy's Favorite Lasagna

Ingredients: Makes 8 servings.
3/4 pound ground beef
3/4 pound ground Italian sausage
2 cloves garlic, minced
1 14.5 ounce can whole tomatoes, undrained and chopped
2 6 ounce cans tomato sauce
1 tablespoon dried basil
1 teaspoon oregano
3 ½ teaspoons kosher salt
1 teaspoon black pepper, divided
6 dried lasagna noodles
2 eggs, beaten
3 cups cream-style cottage cheese
1/2 cup grated Parmesan cheese
8 ounces shredded mozzarella cheese
2 tablespoons dried parsley flakes
Directions
In a large saucepan, cook ground beef, sausage, and garlic until meat is brown. Drain any fat.
Stir in undrained tomatoes, chopping up with a flat-edged spoon. Stir in tomato sauce, basil, oregano, 1/12 teaspoons salt, and ½ teaspoon black pepper into meat mixture. Bring to boiling; reduce heat. Simmer, covered, for 15 minutes, stirring occasionally.
Meanwhile, cook noodles according to package directions or until tender but still firm. Drain the noodles, rinse with cold water. Drain well; set aside.
For the filling, combine eggs, cottage cheese, 1/2 cup Parmesan cheese, 2 teaspoons salt, ½ teaspoon pepper, and 2 tablespoons parsley flakes. Set aside.
Spread about 1/2 cup of the sauce over the bottom of a prepared 9’ X 13” baking dish. Layer half of the cooked noodles in the bottom of the dish, trimming or overlapping as necessary to fit. Spread with half of the filling. Top with half of the remaining meat sauce and half of the mozzarella cheese. Repeat layers. If desired, sprinkle additional Parmesan cheese over top.
Place baking dish on a baking sheet. Bake in a 375º degree F oven for 30 to 35 minutes or until hot in the center (160 degrees F). Let stand for 10 minutes before serving. If desired, garnish with basil.
